Read butter labels for fat content: American usu 10%; European, 11%; “Independent, small batch, 12%. Go for the 12%! It makes a DIVINE shortbread cookie. I made NYT’s “Cultered Butter Cookie” with the 11% and the 12%, tasting side by side. Yes, you CAN tell the difference. It’s almost a religious experience. Enjoy!

Oh gosh yes!!! I concur.
My mother would make butter cookies with margarine because she did not want to spend the extra money on butter. I told her I would buy the butter and make the cookies. After the first bite, she was rendered speechless. She said "I never realized these could taste so good." I just shook my head and said, "Ma - that's why they're called BUTTER cookies."
To this day, if I'm going to spend the time and money on making desserts and various treats, I use only the best ingredients I can find, including butter with the highest fat content. The results are always followed with a ton of smiles, the licking of fingers and lips, asking for seconds and the recipe. On some levels that could be comparable to a quasi-religious experience.

The shortbread hearts look pretty, with a hint of possibly being broken in two halves.
Anyone who expects "gooey brownies" (ugh!) for valentine's day can probably be only cured by strong gustatorial reeducation or hypnosis.
