I needed my calculator to figure out that steak dish at Ferris. Let me see here, that's 5.25 PER ounce at a minimum of 25 ounces - click click click - that's something like $130 or so dollars? That's enough to give you a fiscal heart attack not only a cholesterol shock. I love New York!

Meat, meat and oh yes, more meat. This from a newspaper that covers climate change daily, yet seems unable to connect the dots. Total environmental degradation, and cruel indifference to massive suffering of other sentient beings. All for a few moments of "pleasure". Terribly disappointing and myopic.

@Fred Heitman Except that 50% of the dishes in the list do not contain meat. Seems fair to me, as someone who is pretty much vegetarian/pescatarian at home and eat meat when I go out to restaurants once or twice per week.

One reason that the Times does not have the NYC circulation, besides the price of the daily edition, is that articles such as this are written to the wealthy who can actually afford such meals, which the average New Yorker working stiff can never ever manage to pay for. They are not all in the Trump financial bracket by any means!

I can’t imagine a vegetarian or a vegan would be as tasty. Perhaps if they were stewed.

One must keep in mind that the dishes described in the article are Mr. Wells's personal "fondest pleasures from a year of eating out". But, if Mr. Wells's tastes are representative of the Greater New York, then the New Yorkers are predominantly carnivorous, rather than pescatorious, creatures. (Only one item of seafood is mentioned, and it is but an eel). I let the knowledgeable taste scientists (should they be called gustologists?) to decide, why the proximity to the ocean did not develop a greater propensity to seafood among the New Yorkers.

@Tuvw Xyz So, which is it, we're a great a seafood city because we're so close to the coast, or we can't possibly have as fresh sushi as Japan and California? Both can't be true.

@Steven M. Does the New York City Health Department still require restaurants to use previously frozen fish in sushi or other raw menu items? Are there similar rules in California or other states?

I really enjoyed reading about these varied dishes and even more appreciated the wonderful photos - most done by Jeenah Moon. It would be interesting to learn more about how a food photographer goes about their business.

Interesting that none of these dishes are from the Wells ten best new restaurants of 2018. It would be interesting to see a Wells ten best restaurants of 2018 for further comparison across the three listings.

@PTR Huh? Eight of these ten are places he reviewed in 2018, so they didn't make the cut of top ten. He explicitly said in this article that he only wanted to focus on dishes from restaurants not on the top ten list.

Yes, as you say, the reviewer did note that these dishes are from restaurants other than his top ten new. Nonetheless, it would be interesting to see a Wells overall ten best restaurants of 2018 for comparison, as I indicated in my comment above, as well as to other similar lists that are published. Perhaps he has done one, but not that I recall seeing.

@PTR That's why I don't understand your comment. He did do the ten best restaurants of 2018 already. That was the other list. This list is the best dishes at restaurants that didn't make that list. Every restaurant on this list is new but not in the top ten. If perhaps, you were wondering his favorite dish at the restaurants from the top ten, that would be a different question.

A wonderful selection of international dishes. Among the savory courses, I admire the roasted wild boar and wish that smoked or cured ham made of wild boar were also available. Côte de boeuf and Pepperoni square also look great, but for the latter I would use a fork and knife.
