To: Shirokuma Toyama, randyman Bristol, RI, and others. Given that the absence of sound L in the Japanese language is a culturally acquired, but by no means genetically inherited, characteristic, five letters L could have easily been introduced in Japanese in the syllabic alphabets katakana and hiragana -- la, li, lu, le, lo. Then the pronunciation of Japanese names of dishes and words would have been more compatible with the European languages.

Avocado is not commonly or traditionally used in Japan in sushi. It is an Americanized (or Californicated) hand roll.

"The chef, Masanobu Ishikura, known as Ishi, is vigilant about seafood ..." -- With all due respect to the chef, what is the provenance of his marine products in New York? The scallops come from Hokkaido, but where is shrimp from?

A type of pepper akin to Sichuan peppercorn which sneakily numbs? Reminds me of a visit to the dentist. I'd almost rather eat Sichuan chili than its peppercorns and I hate Sichuan chili. A sneaky numbing is what a dentist does before a tooth extraction. If you like the feeling in your mouth after Novocaine, enjoy your roll.

@Beverly RN What is a weird meat? Every meat is weird if you think about it. Eat a muscle? Eat a liver? Gnaw on a rib? So, again, what is a weird meat?

@Matthew, okay. I realize I exaggerated a bit but I’m still recuperating from Mishan’s review of Mama Fina (split pork heads) and Lahi (pork belly stewed in blood). I adhere to a largely vegetarian diet and I’m what you might call a ‘meat weenie’. I eat an occasional piece of fish and not enthusiastically. Mishan’s à far, far braver soul than I in the food department.
