A Firecracker of a Beef Rib and Other Surprises at Ferris

I look forward each week to Pete Wells' review, his facility with language makes them one of the highlights of this paper. This one is no exception; "it reminded me of one of those Leatherman tools that unfolds to reveal not just a knife and screwdriver but also a spoke wrench, fish scaler, eyelash curler, olive pitter, tuning fork and eel skinner." Move over P.G. Wodehouse! I don't necessary agree with Mr Wells' conclusions (Le Coucou over Gabriel Kreuther? I think not), but they always make me think and whet my appetite (literally). I think Ferris merits a visit.

Dear Mr Wells, I am far away in Ohio but your writing is so vivid and beautiful that I read every column you write and vicariously enjoy the meals you write about.

In the photo of the restaurant, on the left, there are some orange objects hanging on a line. Are those persimmons hanging to dry? If so, they are a Japanese speciality also found on the West coast in the winter. The end product looks like little dead mice, but taste very sweet.

By the way some of the customers are dressed, I wonder if the heat is working in the place.

Sounds like your experiences were closer to a three-star rating. I'm anxious to try it. Thanks for reviewing, Preston

The vegetable-with-meat or with-sepia dishes seem to be eclectic mixtures of ingredients that satisfy the chef's tastes. The tattoos on the arms of the chef and the barmaid are not very inviting.

Is it a coincidence that both Pete Wells and Rachel Levin work in the “Leatherman” reference before reaching the end of the second sentences of their respective articles on a new restaurant and on gender roles and garbage duty, or is it just aggressive affiliate marketing?

"It's a modest restaurant that overdelivers, cares about little details and has a personal, handmade sensibility". Indeed, what we need more of instead of the overly pretentious, fails to deliver, hedge fund crowd grandstanders.

Omg, how are you not going to show us a photo of that steak?! :_(

Those are not 2x8s. They are maybe 4x6s, nominally.

A rustle of Chartreuse. Yellow or green?

The name is apparently a reference to Pantone 388 C, so it would be yellow Chartreuse.
