I wish I could find pomegranate molasses in Lake Placid, New York. Can I simply mix some pomegranate juice into some molasses?

I wish the NYT were more conscious of the limitations of buying uncommon stuff out here in the boonies and offer substitutions.

You might be better off reducing a lot of pomegranate juice for a very long time, rather than just mixing it into molasses. But you can also buy online (like at Amazon).

And even though you're out in the boonies, you might very well be able to find it. Wegmans often carries it in its international section.

Please stop pretending that you have discovered/uncovered/recovered food.

It's okay to celebrate a vegetable or a dish or whatever without the silly hype.

If you haven't had carrots from Fairbanks, Alaska, you need to... they are usually at the farmer's market toward the end of the summer, and they are truly the sweetest I've ever had - I live in Anchorage and will bring home 10 pound bags if I'm lucky enough to be up in Fairbanks at the right time of year... they are that good...

Maybe your carrots up there are so good because od the cold. We live in the Adirondacks, comparable climate to Anchorage (but not Fairbanks). Our local farmer keeps a lot of carrots in the ground through the winter; she then harvests them directly from the hard frozen ground. This seems to concentrate the flavor and they are the best carrots I have ever tasted, bar none.

Thanks, but odd timing for a recipe featuring heirloom carrots as the season is now over at the Greenmarkets in NY. When I first saw the title, "Carrots...Have Arrived" I was hoping for a surprise about an early spring....

What a beautiful salad. Simply brilliant way to use roasted carrots. I will go out and buy some pomegranate molasses. Both arugula and carrots are coming out of our garden now so it's gonna happen!

Although I am not really a fan of carrots, roasted root vegetables are quite delicious. The photos actually had me wanting this salad. Roasted carrots, arugula, and pomegranate...Definitely not a boring salad.
