I prefer my proteins sans heterocyclic amines and polycyclic aromatic hydrocarbons - not to mention nitrates. May I suggest a lightly grilled fish or veggie burger ?

When I was growing up, our Fourth of July picnic was ALWAYS lamb shish kebab. My father would cut up the lamb ahead of time and marinate it olive oil and lemon juice, with herbs. Then on the day it would be grilled on skewers with onions, bell peppers, and mushrooms. Most people would wait for it to be grilled, but my mom and I would just pull some chunks out of the marinade and eat it "raw". Yum!

Ms. Roman's article introduces, perhaps unintentionally, a new and perfectly respectable piece of cutlery: skewer. The skewer needs not be disposable, but made of some noble wood or metal, ivory, fossil bone, etc.

This article interested me because it gave me some new ideas instead of just hamburgers and hot dogs to share with my family that we can make for outdoor BBQs. The lamb pieces seasoned with cumin and turmeric with onions and peppers are new healthy change then processed hot dogs. It takes cooking to the next level. I have always liked to cook or bake and this is something that I can add to my memory to make instead of the simple American food of hot dogs or hamburgers.
