The recent Roast Chicken methods are wonderful. When properly executed the simple Salt & Pepper Chicken and other variations on the theme to not, in my opinion, need or benefit from enhancements such as these. They are certainly not bad, but they are not necessary. A properly roasted S&P Chicken can and should stand on its own. Have you ever wondered why those grocery store rotisserie chickens are so popular? They are not world-class birds and they are certainly not seasoned and air-dried for 24 hours. The remain popular because they are dirt simple, consistent and have great eye appeal. Roasting your own, one or two at a time, using Ms. Clark's S&P method takes a little longer, looks a bit better and tastes a lot better. Properly roasted whole chicken does not need these enhancements. Plain and simple is wonderful and yup, a very simple bird should stand on its own with simple roasting... (even if it does mess up that pristine oven!)
